Main Dish Monday: Shrimp Penne Pasta w/ Broccoli

Heyyyy Happy Monday! I think I'm really liking this Main Dish Monday series. It's helping me get back into this whole cooking thing. I'm a simple kind of girl, so that mean my dishes will be just as simple. So, lets get to this weeks meal.

This week I had a taste for some shrimp, so Shrimp Penne Pasta w/ Broccoli was on the menu.

The recipe called for:

Shrimp (or Chicken)
Penne Pasta
Alfredo Sauce

First I boiled the penne pasta for 11mins and my broccoli for 3-4mins...after I drained both and set to the side for a minute.

I returned the pasta to the cooking pot proceeded by the broccoli, shrimp then alfredo sauce. Stirred and then back to the stove on low to cook together for an additional 7mins.

Now, I cut my prep and cook down on this dish by 12 mins or so, because I went to my local grocer and had my shrimp peeled, deveined and steamed with Old Bay seasoning. So all I had to do was add it to the pasta. This step right here saved me so much time in the kitchen.

Add a small caesar salad, garlic bread and a glass of white wine would complete this meal.

Quick and simple!

  1. My mom makes her own alfredo sauce and it's sooooo good! I don't know how she makes it though, lol. This is another great, quick meal to make. And you're right, a warm slice of slightly toasted garlic bread and a salad would be the perfect accompaniment to this dish.
